2016 ‘Nielluccio’ Sangiovese

2016 ‘Nielluccio’ Sangiovese. 12.9% Alc. 70 dozen produced. $35

The fruit used to produce this wine was sourced from Vivian Vineyard in Watervale, consisting of darker clays on limestone. The fruit was picked over 2 days, the first on the 5th March at 11.7 baume and the second on the 12th March at 12.3 baume. Both parcels where fermented separately, the later containing 20% whole bunches. Natural ferment took place over a two week period, during which the ferments where lightly hand plunged once or twice a day. Following this period the ferments where separately pressed to tank to settle off large lees for a few days before being gravity racked to ceramic eggs for maturation. The wine was untouched for 10 months before a small sulphur addition was made. The wine was then racked and bottled without fining or filtration
