The Tempranillo fruit was sourced from Springfarm Vineyard, located on the Northern side of Sevenhill. The vineyard is slightly south facing and planted on red clay over slate. This was our first pick for the 2015 harvest, an extremely early one for the Clare Valley region. Hand picking took place on the 31st of January, 2015.
At the winery the fruit was destemmed into fermenters, 20% whole bunches were left at the bottom of the ferment. Fermentation was left to occur naturally and lasted around one week, in total the wine spent two weeks on skins. Following fermentation the must was basket pressed to tank where it was left to settle for a week before being transferred to old French oak barrels. The wine spent two months in barrel before being racked and blended in tank. A small sulphur addition was made before the wine was bottled, unfined and unfiltered.

From Springfarm Vineyard in Sevenhill, Clare Valley. Joven (young fresh wine, or as some call it, vin de soif) style, decidedly. Picked very early, to the point where a few locals were raising their eyebrows. Hits the bottle at 12.8%.
Sweet cola scents, touch of the cherry cola, whiff of dark chocolate, nice hit of green herbs and sweet spice. Joyous! Hurrah! Easy to drink. So easy. Loose knit, juicy, big dusting of spice, succulent tannins, impressive length, finishes with a little sticky sweetness and some bitter tannin tug. Superb version of the style. Go go go.
