2018 ‘Watervale’ Riesling. 11.3% Alc. 770 dozen produced. $30
The Riesling fruit used to produce this wine was grown on two sites of Gullyview Vineyard – G1 (Grace) which has a slight northern aspect, and the soil consists of heavy red clay over limestone. The second site is GV1 (Gullyview), which is slightly higher in altitude and has more of a Southern aspect and the soil consists of a much bonier clay over limestone. Both blocks are 43 years old. The final blend is 75% G1 & 25% GV1. We hand picked over 3 days, the 23rd & 28th Febuary and the 2nd March. The wine is made up of 13 different ferments. All had around 24 hours skin contact before pressing, the juice was then cold settled for 3 or 4 days before being transferred to either stainless tank, ceramic amphora or slovonian oak for ferment. Fermentation lasted around 3 weeks and the wine sat on the vessels on full lees for 2 months. After this the blend was decided and all the wine was racked to stainless where it sat on fine lees for 6 months. The final blend is 50% stainless, 45% Ceramic & 5% new oak. Prior to bottling a small sulphur addition was made, the wine was bottled unfined and unfiltered.
